Original “Pilipit” Recipe

Ingredients:
- 2 Cups flour
- 1/4 tsp. baking powder
- 1 egg
- 1/2 cup milk
- oil for deep frying
- 5 cups brown sugar
- a pinch of salt

- Mix and sift flour, baking powder, and salt into a bowl, Set aside.
- Beat egg and add to the milk Pour this mixture into sifted flour.
- Knead until smooth, then divide into several portions,
- Roll each portion on bread board into strips 4 inches long,
- Twist the strip to bring the ends together ( or make an”8″ shape, if desired).
- Fry in hot oil until brown, drain, and dip in syrup.
- To make syrup; Put brown sugar and a little water in a saucepan, Caramelize over medium heat, stirring constantly until sugar is dissolved.

PILIPIT or SHAKOY SWEET
Pilipit is a tagalog term for twisted. So this are twist and hard crunchy chewy sugar-glazed bread twists.
Ingredients:
- 2 cups Glutinous rice, reserve the 1/2 cup for dusting)
- 1 cup unsweetened shredded dried coconut
- 1/2 cup milk
- 1/2 cup water
- 1 cup
brown sugar
(white can do)
- 1/2 cup water (for the sugar glaze)
- 1/2 tsp salt
- 1 cup oil for deep frying + 50 grams butter
Note: I added butter for frying to make it more savory.
Procedure:
- Combine the sticky rice flour, grated coconut, water, milk and mix well. ( You can always adjust the water for making this dough.
1. Knead the dough on a lightly floured or dusted surface for about 10 minutes or until dough is smooth & elastic.
2. Just form the dough into one long log and then cut each log into equal pieces.
3. After the dough is ready, Knead the dough to form long size dough.
4. Starting from one small cut dough, knead long (elongated) and take the center to make the same half fold, fold each strips and twist. If you are lazy enough,see the photo below and follow. =)
5. Deep fry the twisted dough until brown. The longer the dough is fried the crunchier the result will be. Your timing choice depends on you. =)
6. In a separate pan, add brown sugar and water and cook over a medium fire wait until a syrup is formed. Set aside.
7. In another pan. Put about 10-12 pieces of pilipit (twisted cook dough) in a very low fire and add the syrup. Mix well until all pilipits were coated.
8. Drain and Serve as sweet snack or as dessert. Enjoy!!! .
