How to Make Papaya Quick Bread
Note: I added 1/2 cup of cornstarch flour to thicken the mixture of the original recipe. And it worked :)

- 3/4 cup mild olive oil or 1 cup melted butter)
- 3/4 cup packed brown sugar
- 1 cup finely grated carrots
- 1-1/2 cups mashed ripe bananas (about 2 pcs )
- 1-1/2 cups mashed ripe papaya
- 1-1/4 cup chopped nuts (walnuts, pecans, almonds,etc )
- 4 cups white whole wheat flour
- 1/2 cup cornstarch flour
- 1 teaspoon salt
- 1 Tablespoon baking soda
- 1 Tablespoon cinnamon
- 1 teaspoon nutmeg / allspice / ground ginger)
- METHODS OF COOKING:
- Preheat oven to 325ºF. Grease and flour 2 metal loaf pans or 24-36 small muffin pans lightly.
- Wash, peel, and shred carrots.
- Wash and cut papaya in half; scoop out seeds and membrane; peel and mash or puree papaya fruit.
- Combine eggs, oil, and sugar in the mixing bowl of an electric mixer. Mixing on low speed just until combined.
- Add carrots, (applesauce, if using), mashed papaya, nuts and/or dried fruits. Stir until well combined.
- Mix together thoroughly salt, flour, cornstarch, baking soda, spices (of your choice) in a separate bowl.
- Add to the egg mixture, stirring gently by hand.Spoon batter into prepared loaf pans (or muffin pans).
- Bake at 325ºF for 50-60 minutes.
- Test for doneness: A wooden tester inserted into the center of bread should come out clean.
- Remove bread from oven and let rest in pan for about 10 minutes before removing from pan or slicing.
- Finished. Enjoy with hot coffee or tea ^_^.
