Easy Vigan Empanada Recipe

Ingredients:

Casing:

1 1/2 cup Mochiko Rice Flour
Orange food coloring (optional)
1 tbsp. Oil 
1/2 cup Water


Filling:

1 Green (Unripe) Papaya, grated
4 pcs. Longganisa Sausage Chopped (remove from its casing)
1/2 Chopped Onion
1 Garlic Clove Finely Chopped
6 Eggs
Salt
Pepper
Cooking Oil for deep frying

Cooking Instructions:

For Casing:
  1. Mix ingredients in a bowl and knead dough lightly.
  2. Take about a 2-3 tablespoons of dough and flatten with rolling pin.
  3. Set aside while you make your filling. Before you make your filling preheat your deep fryer by adding the cooking oil and set aside.
For Filling:
  1. In another skillet pan saute garlic and onions in oil. Add Longganisa Sausage and season with salt and pepper to desired. When sausage is cooked put in a bowl and mix it a little to cool it down. Wait 2-3 minutes and mix in grated papaya.
  2. Spoon out 2-3 tablespoons of filling to flattened dough and crack a piece of fresh egg. Seal the sides and deep fry in the preheated deep fryer.
  3. Place Empanadas in a plate topped with plenty of paper towels to blot oil. Serve in another clean platter and with sweet chili dip or garlic vinegar on the side.

                    Ham, Egg, And Cheese Breakfast Braid

INGREDIENTS

Servings: 6 Braids

  • 8 eggs
  • 1/2 cup heavy cream 
  • Salt
  • Pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 sheet puff pastry 
  • 6 slices ham
  • 6 slices cheddar cheese
  • 1 egg, beaten (for egg wash)

PREPARATION For COOKING:

  1. Preheat oven 375ºF.
  2. Add eggs, heavy cream, salt, pepper, onion powder, and garlic powder to a bowl and whisk to combine. 
  3. Heat a saute pan to medium heat and spray with nonstick spray. Add the egg mixture and scramble until soft and almost fully cooked.
  4. Flatten out the puff pastry and cut it into thirds, then cut in half.
  5. Take one sheet of puff pastry and cut 3 strips with a paring knife, leaving about 1 inch on the end to hold it together. Braid the 3 strips gently.
  6. On the second sheet of puff pastry, place ham, egg and cheese, making sure to leave some place around the edges. 
  7. Place the braid on the top of the cheese and egg mixture, then brush with egg wash.
  8. Place braids on a lightly oil sprayed baking sheet.
  9. Bake 25-30 minutes or until pastry is risen and deep golden brown. 
  10. Serve warm and enjoy!

Homemade Skinless Longganisa

How to Make Homemade Skinless Longganisa

A simple way of making skinless longganisa, healthier than the one 
that we can buy from the market that is fully loaded with chemicals. 
Make it at the comfort of your home, happy cooking,

Ingredients for 2-3 servings:

  • 1/4 kilo ground pork
  • 8 cloves garlic ( minced)
  • 1 tablespoon all purpose flour
  • 1 1/2  tablespoons sugar
  • 2 teaspoons vinegar
  • 1 tablespoon soy sauce
  • 1/2 teaspoon ground pepper
  • 1/4 teaspoon salt

Procedure for making Longganisa:

1. Combine  all the ingredients, mix well until fully blended, then divide into 8 portions, roll with your palms and form into longganisa shape.



 
2. Refrigerate or fry  right after making it, then serve it hot with fried egg and fried rice.
 



Note: Put a little sugar when you fry it, to give a caramelized texture.

Creamed Spinach And Egg Bowl


INGREDIENTS:

Creamed spinach:

  • 20oz spinach
    6 Tbsp. butter
    1/4 diced onion
    1/4 cup flour
    1 cup heavy cream
    1 cup whole milk
    1 1/2 tsp salt
    1/8 tsp nutmeg
    1 tsp black pepper

Breakfast bowl:

  • 1 sourdough bread bowl
    1 slice Mozzarella cheese
    Creamed spinach
    1 egg

PREPARATION For Cooking:

  1. In a large pan, sauté spinach until cooked then place in a strainer to drain excess water.
  2. Melt butter and cook onion until soft. Whisk in flour. Make sure there are no lumps. Add cream and milk, then stir until thickened.
  3. Return spinach to mixture. Add salt, nutmeg and pepper, then stir until fully incorporated.
  4. Hollow out a sourdough bowl, line the hole with mozzarella cheese, then spoon creamed spinach in. Spoon a dip in the middle, then crack an egg in the dip so it doesn’t fall out of the bowl.
  5. Bake at 350˚F / 175˚C for 25 minutes, until the egg is set and the white has solidified.
  6. Season with salt and pepper and enjoy!
